Grilled Courgette and mozzarella salad with olive oil, chilli, mint and lemon! The perfect summer salad AND an ideal accompaniment to a BBQ! Courgettes are often overlooked in British diets, but they grow brilliantly in UK weather and are in-season now! Which means you can buy British from the supermarkets and for an affordable price (about 40p per large courgette at the moment!). Aside from a little bit of faff when prepping, this recipe is sooooo simple, and ready in less than 20 minutes (15 if you’re a speedy peeler!). Ingredients:

3 courgettes

1tsp rapeseed oil

1tbsp garlic infused olive oil

Juice of half a lemon

1 red chilli (optional)

small handful of fresh mint

black pepper

1 ball of mozzarella

Method:

Start by slicing 3 courgettes into ribbons. If you have a mandolin this works brilliantly, otherwise you could use a veg peeler or knife to slice the ribbons.

Drizzle the ribbons with a bit of oil and rub to evenly coat the courgette. Then grill on the bbq until you can see grill lines and the courgette starts to brown. Pop in a dish for later!

To make the dressing, mix 1tbsp garlic infused olive oil with the juice of half a lemon, 1 chopped red chilli and a small handful of finely chopped fresh mint. Season with a bit of black pepper, mix and then drizzle over your courgette!

Tear up a ball of mozzarella and add this to your salad, stir to mix the dressing in with the courgette and cheese, then serve and enjoy!!
